The supposed lost art of canning is a myth. My wife and I have been growing and canning our own food for over 10 years. The supposed limit of 6-18 months is merely a lie. As long as the seal is good you will be fine. We've been eating 6 year old canned food for years, which tells you how much we have stored.We also dehydrate and soon freeze-dry a lot of food. There are web groups for canning(the rebel canners) and others. And they have over 65,000 members. Check them out. They are on Youtube and Facebook and have their own website.
